Banana Bread Muffins with Dates
INGREDIENTS:
- 1 1/4 cup all-purpose flour
- 2-3 ripe bananas
- 1 cup chopped Sunsweet Pitted Dates
- 1/2 cup sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp vanilla extract
INSTRUCTIONS:
1. Preheat oven to 325°F. Spray your muffin pan with nonstick spray or use cupcake liners.
2. Whisk together the flour, salt, baking soda, and cinnamon in a bowl.
3. In a separate bowl, mash the bananas. Mix in the egg, sugar, butter, and vanilla until smooth.
4. Combine wet and dry ingredients. Fold in chopped dates, but reserve a small portion to top each muffin.
5. Pour your batter into the pan. Top each muffin with a few of the reserved chopped dates.
6. Bake for 25 to 30 minutes.

FULL RECIPE: Pumpkin Cake Bars
Ingredients
● 1 cup oat flour
● 1⁄2 cup almond flour
● 1 tsp cinnamon
● 1⁄2 tsp pumpkin pie spice
● 1⁄2 tsp baking soda
● 1⁄4 tsp salt
● 1 large egg
● 3⁄4 cup pumpkin purée
● 1⁄3 cup brown sugar
● 2 tbsp maple syrup
● 2 tbsp melted coconut oil or butter
● 1 tsp vanilla extract
● 1⁄2 cup chopped California prunes
● Optional: 1⁄4 cup chopped pecans or dark chocolate chips
Instructions
● Preheat oven to 350°F. Line an 8×8 pan with parchment paper.
● In a large bowl, whisk oat flour, almond flour, cinnamon, pumpkin pie spice, baking soda, and salt.
● In a separate bowl, mix pumpkin, egg, sugar, maple syrup, oil, and vanilla until smooth.
● Combine wet and dry ingredients; fold in chopped prunes (and pecans or chocolate if using).
● Spread evenly in the pan and bake for 22–26 minutes, or until the center is set.
● Cool fully before slicing.
