Blueberry and Yogurt Parfait

Layers of fruit, yogurt, and almond biscotti make up this simple dessert that doubles as a light breakfast or snack.

Instructions

    Combine prune bits, blueberries, fresh plum concentrate, and 150 ml water for 10 minutes to soften the prunes, then blend.

    Stir the lime zest and honey into the yogurt. Layer yogurt, blueberry puree and granola in dessert glasses. Decorate with halved prunes, sesame seeds, and rosemary, if desired.

125 g Prune Bits

4 Pitted Prunes, halved (optional)

150 g frozen blueberries

15 ml Fresh Plum Concentrate

150 ml water

1 teaspoon lime zest

1-2 tablespoons honey

650 g  plain Greek yogurt

150 g granola or crumbled biscotti

2 tablespoons toasted sesame seeds (optional)

1 small sprig rosemary for garnish (optional)
