Snow Pea Salad

This recipe is inspired by the French pea salad Mangetout. The easiest way to make this salad when you don’t have access to garden peas is to use tender snow peas or snap peas. You can use prunes in two ways: drizzle Fresh Plum Concentrate into the vinaigrette for tangy sweetness and/or mix in prunes for chewy texture.

Instructions

    Bring a pot of salted water to a boil and have ice water ready. Cook the snow peas briefly until crisp-tender, about 1 minute, then plunge into the ice water. Drain.

    In a small bowl, whisk together the lime juice, Fresh Plum Concentrate, salt, cayenne, and sesame oil.

    In a larger bowl, mix prunes, cucumber, and snow peas with the salad dressing. Let stand for 10 minutes. To serve, divide the salad into portions and scatter the sesame seeds and cilantro on top.

350 g / 12 oz snow peas or snap peas

90 ml / 6 tablespoons lime juice

8 g / 1 teaspoon Fresh Plum Concentrate or honey

1 teaspoon kosher salt

pinch of cayenne

90 ml / 6 tablespoons toasted sesame oil

100 g / 1/2 cup Prune Bits or pitted prunes

1 cucumber, thinly sliced crosswise

10 g / 1 tablespoon toasted white sesame seeds

1 handful chopped cilantro
