Dried Plum Powder draws out the aromatics of Star Anise and Szechwan Peppercorns in this Chinese-inspired rub.
Blend well in a grinder until fine. Sift to remove any large particles. Store in a sealed container. Some clumping will occur over time; simply stir to break up.
28 g / 1/4 cup Dried Plum Powder
14 g/ 1 heaping tablespoon salt
2 pieces star anise
3.5 g / 1 tablespoon sichuan peppercorns
4 g / 1 teaspoon ground cinnamon
5 g / 1 tablespoon fennel seeds
2 g / 1 teaspoon cloves
Zest of 1 orange
