Sometimes your fiber goals can be as easy as adding prune juice to a dish!

Recipe:
Sheet-Pan Chicken Sausage & Brussels Sprouts 
Ingredients (4-6 servings):
- 2 packs Italian or chicken sausage (sliced)
- 2 packs Brussels sprouts (halved)
- Avocado oil
- Salt + pepper
- Cooked white rice
- Red pepper flakes (optional)
- Chopped walnuts (optional)
- Parmesan (optional)

Simple Balsamic Reduction (with Sunsweet Prune Juice) 
Ingredients:
- 1-1 1/2 cups balsamic vinegar
- 1/4-1/2 cup Sunsweet prune juice (you can adjust to taste)

Cooking Instructions:
1. Add sliced chicken sausage and Brussels sprouts to a large sheet pan. Coat with avocado oil, and season veggies with salt and pepper. Bake at 425°F for 30-35 min, stirring once.
2. Start cooking the rice in a separate pan in the meantime.
3. For the balsamic vinegar reduction, add the vinegar and Sunsweet prune juice to a skillet and bring to a simmer over medium heat. Don’t boil hard - low and slow is key!
4. Reduce heat and stir occasionally for about 15-20 minutes. It’s ready when the liquid has reduced by about half, and coats the back of a spoon. It will thicken more as it cools.
5. Once the sausage and veggies are done baking, layer this on top of the cooked white rice, along with a drizzle of the sauce.
6. Top with chopped walnuts, red pepper flakes and/or parmesan and enjoy!
