Baking with the whole family is one of our favorite holiday traditions. It’s so fun to get the little ones in on the fun 🍪 This year, we’re making this delicious Sticky Date Cake with our Sunsweet Dates. Happy holidays everybody!
FULL RECIPE:
**CAKE INGREDIENTS**
* 8 oz Sunsweet pitted dates
* 1 cup milk
* 1 tsp baking soda
* 4 oz unsalted butter, room temp
* ½ cup brown sugar
* 2 large eggs, room temp
* 1 tsp vanilla extract or paste
* 1⅓ cups all-purpose flour
* 1 tsp baking powder
* Pinch of salt
**TOFFEE GLAZE INGREDIENTS**
* 1 cup dark brown sugar
* 3 tbsp white sugar
* 3 tbsp butter
* ¾ cup heavy cream
* 2 tsp vanilla extract
* Pinch of salt
**INSTRUCTIONS**
1. Heat oven to 350°F. Line an 8×8 inch pan with parchment, leaving overhang for easy removal.
2. Chop dates and place in a bowl with baking soda. Pour hot milk over, stir, and soak 10 minutes to soften.
3. While dates soak, whisk flour, baking powder, and salt in a medium bowl.
4. Mash date mixture with a potato masher until mostly smooth and paste-like.
5. Add butter and brown sugar to date paste and mix until well combined.
6. Add eggs and vanilla; mix on low until incorporated.
7. Add dry ingredients to wet and mix on low until mostly smooth; small lumps are fine.
8. Pour batter into pan and bake 30 minutes. Test with a toothpick; it should come out mostly clean with a few moist crumbs. Bake 2-minute increments if needed.
9. While cake bakes, combine all glaze ingredients in a small saucepan. Stir and simmer over medium heat 5–6 minutes.
10. Once sugars dissolve and sauce loosens, remove from heat and set aside; it will thicken as it cools.
