Ingredients

    5 tablespoons lemon juice

    1/2 teaspoon dried oregano

    1/2 teaspoon salt

    1 pinch ground black pepper

    5 tablespoons olive oil

    1 teaspoon Fresh Plum Concentrate (optional)

    1 small garlic clove, minced (optional)

    Leaves from 1 sprig fresh mint, stemmed and sliced

    75-100 g / 1/2 cup Diced Prunes

    125 g / 6 cups baby arugula

    3 cups / 300 g seedless red watermelon cut into cubes

    1/3 cup / 75 g sliced red onion, soaked in cold water and drained

    200 g / 3/4 cup crumpled feta cheese

Instructions

    To make the salad dressing, mix together the lemon juice, oregano, salt, pepper, olive oil, and plum concentrate.
